Vegan Mango Chocolate Chip Bread


I’ve been seeing banana bread all quarantine and to be honest, I don’t like bananas. There, I said it. So in light of my dislike for bananas but LOVE for mangoes, I bring you - Mango Chocolate Chip Bread...and it’s vegan!! Summer’s almost coming to an end so here’s a good way to use up some of your mangoes!


I first had a version of this bread back when I was nannying for a family when I lived in NJ. I since lost the recipe and decided to try to come up with one one my own and make it vegan friendly since I know there’s a lot of folks out there that don’t use eggs either. I’ve replaced the eggs + fat with coconut milk! You don’t taste it at all but it keeps the bread soft and moist. I also used Enjoy Life! Semi-sweet chocolate chips, they’re vegan and can be found in pretty much any grocery store.

I’ve been experimenting with baking quite a bit these last few months as I’m sure a lot of you have. It’s been a blessing and a curse lol! Blessing being the learning part, the curse being eating it all and gaining L-B’s! I’m excited to give y’all a semi-healthy dessert/snack recipe! Hope you guys love this one as much as I do!

 

Vegan Mango Chocolate Chip Bread


Ingredients:

  • 1 3/4 cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup + 2 tbsp white sugar

  • 1/4 cup brown sugar

  • 1 tsp cinnamon powder

  • 3/4 cup full fat coconut milk, I used Thai Kitchen

  • 2 tsp vanilla extract

  • 2 1/2 cups mangos, peeled and diced

  • 1 cup semi-sweet chocolate chips, I used Enjoy Life

  • 1 tbsp lemon juice

Directions:


1. Preheat oven to 350°F and prepare your bread pan - lightly grease and toss some flour. Set aside.


2. Add all dry ingredients (flour, baking soda & baking powder, salt, both sugars, and cinnamon) in a large mixing bowl and whisk around to mix.

3. In a measuring cup, pour out 3/4 cup coconut milk then add vanilla extract and mix well.

4. Pour wet into dry ingredients and mix to incorporate. It will seem dry at first but keep mixing until there are no dry spots. Do NOT add more milk, the mangoes and lemon juice will add some more liquid as well.

5. Add mangoes, chocolate chips and lemon juice. Mix well. Pour into prepared bread pan and bake for approx. 65-75 minutes. The center should bounce back when it’s done. Remove from pan and set ona rack to cool slightly. Slice and serve with a pat of vegan butter!
