Mediterranean Breakfast Potatoes


Who misses going to brunch? I mean, I’m sure we miss going out to eat, period - no matter what meal it is! I’m missing one of my fave brunch spots more than ever lately, More Than Waffles. They have some awesome breakfast potato mashups, my husband and I loved this one in particular. So since we can’t go out to have this dish, I decided to recreate it at home! I bring you - Mediterranean Breakfast Potatoes!


This recipe is super easy and most of you should already have these ingredients on hand. I used red skin potatoes because I love the earthy flavor and texture the skin adds but you can use whatever you have at home. I know feta is an acquired taste so if you don’t like it, you can substitute with goat cheese or even mozzarella. Can’t wait for you guys to try this one!

 

Mediterranean Breakfast Potatoes

Ingredients:


  • 3 red skin potatoes

  • 1 - 5 oz. pack of spinach, chopped

  • 1 Roma tomato, diced

  • 5 cloves garlic, minced

  • 1/2 cup feta cheese crumbles

  • 3 tbsp extra virgin olive oil

  • 1/2 tsp paprika

  • 1/2 tsp oregano

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/4 tsp white pepper (can sub black pepper also)

  • Salt to taste

Directions:


1. In a pot of water, boil the potatoes until they’re about 80% cooked through, fork tender but still a little tough in the middle. Remove from heat, drain and cut into cubes.


2. Heat olive oil in a saucepan over medium heat, once oil is hot, add garlic and sauté until fragrant, about 2 minutes. Then add potatoes, and spices, mix well. Sauté on high for about 5-6 minutes, until potatoes brown and get slightly crispy around the edges.


4. Next add chopped spinach and toss with potatoes, once spinach had wilted, add feta cheese crumbles. Sauté for 2-3 minutes so the feta can get slightly melty.


4. Lastly, add diced tomatoes and give one good stir to toss well and remove from heat. Serve immediately with your favorite hot sauce or just like that, enjoy!
