Cookie Butter Coffee Shake (vegan)

I have been on an absolute cookie butter kick lately! If you live in California or wherever they have Coffee Bean and you’ve been this holiday season, you may have seen their assortment of cookie butter drinks: hot, iced and blended - the latter being my favorite!! Once I had it, I was hooked.

Nishi from @nishimamiscookies has also created a chocolate cookie butter stuffed cookie for the holidays, as soon as I saw this item - I had to place my order! If you’re in Cali, you *must* absolutely order from her!! Her cookies are amazing, they are different and you can tell they are made with lots of love and care. I’ve personally met Nishi and she is just as sweet as her cookies! :-) Make sure you stop by her page! (not an ad!)


Although I can’t indulge on this blended cookie butter drink everyday - way too many calories, I decided to make my own homemade version because I know I’ll miss it once the holiday season is over! AND - it’s VEGAN!!


I sometimes don’t do so well with dairy and try to sub out non-dairy ingredients when possible and as cookie butter and Lotus Biscoff cookies are both vegan, it was feasible! I used Speculoos Cookie Butter from Trader Joe’s. This shake is rich and creamy with strong flavor notes! It’s enough for anywhere from two to four people depending on how much or how little you want! Also - if you don’t love coffee, you can leave it out. It’ll still be just as yummy!

 

Cookie Butter Coffee Shake (vegan)

Ingredients:

  • 1/3 cup non-dairy milk or milk of your choice, I use Oatly

  • 1 pint vegan vanilla ice cream

  • 1/4 cup cookie butter

  • 1 tsp instant coffee

  • 1/2 cup ice cubes

  • 9 Biscoff Lotus cookies


Directions:


1. Add all ingredients except for the cookies in a blender and blend smooth.


2. Then add 8 cookies and pulse a few times to leave a few cookie bits. Crush the remaining cookie for garnish.


3. Pour into glasses and top with cookie crumbles or whipped cream if desired. Enjoy!
